About the dishes
The class will start with a little theory on the making of frozen desserts like icecream, gelato, sorbet, granita and more along with the differences between them. Chef Freny will also demonstrate making the most important element of her best selling dessert—the raspberry frozen parfait from Jardin du rose. This will be followed by other frozen desserts like passionfruit granita, making a raspberry sorbet and a traditional anglaise based earl grey icecream.

About the Chef
After her graduation from the prestigious St. Xavier’s College in Mumbai chef freny Fernandes decided that pastry was her true calling and switched careers to become a Pastry chef. She worked in the famous JW Marriott Sahar after which she left to pursue her education in The Culinary Institute of America. She has worked in Multiple Michelin star restaurants and five star hotels in New York and Florida. Freny Fernandes now owns and runs India’s first dessert bar – Monèr located in the bustling neighbourhood of Turner road, Bandra.
