In this class, you can learn how to put together an entremet, which is a deeply complicated and layered dessert with multiple elements and fine decorations. Chef Shaikh will show you the technique of mirror glazing, alongwith showing teaching the process of baking a perfect sponge cake, mascarpone lemon mousse, a strawberry jelly insert and feuilletine crunch, which are cripsy wafer-like flakes that help add texture to desserts.

About the chef
Zareen’s journey as a pastry chef began on an impulsive note. Initially a  self-taught baker, she went on to complete a course at the prestigious Le Cordon Bleu, London. She has worked at one of the top patisseries in Mumbai before starting out on her own and has also trained under many international chefs. Currently, she operates from a studio cloud kitchen in Mumbai and conducts online as well as in-person workshops.
