What you will learn
This course will be divided into several parts to provide you with the A-Z knowledge of putting together a wedding cake. Here's how the class with flow:

1. Introduction

  • Making multi-tiered cakes from scratch.
    Note: We have included the use of dummies in this session because it is an important skill to have while making wedding cakes; working with a dummy is very different from a real cake and often wedding cake orders will require you to work with a dummy. 
  • Equipment needed to put together a wedding cake 

2. Decoration and designing cakes 

  • Ganaching around the cake
  • Draping cakes with fondant (marbled fondant, textures on fondant and metallic lustre)
  • Weathered wood effect and metallic crackle effect
  • Stencilling and ruffles
  • Onlays and edible lace
  • Metallic rice paper and isomalt sails
  • Wafer paper flowers and paper mesh
  • Airbrushing
  • Geode
  • Closed peony gumpaste flower
  • Bas relief and other mould work
  • Sugar print decoupage

3. Finishing touches

  • Stacking and assembly of five tiered cake with a real rotating tier
  • Stacking and assembly of a wedding cake with an acrylic transparent separator and LED lights
  • How to transport wedding cakes and handle cake set-ups at the venue
  • How should you price and sell your cakes

About the dishes
Learn how to make eggless bespoke cakes (with as many as 5 layers), as well as various techniques for decorating, like using ganache, draping with fondant, using stencils, ruffles–decoration with icing, onlays and edible lace, geodes—which includes designing the cake to look like a crystallised rock—airbrushing, sugar print decoupage—which gives the print effect on cakes—isomalt sails—which are cake decorations made using isomalt crystals, and much more.

Self-taught home baker and owner of The Chocolate Factory, Tasneem Shah is an expert when it comes to baking as well as decorating cakes. She is known to have attended numerous workshops to refine her inherent skills beyond comparison. Her body of work reflects her deeper interests in nature, her travel experiences and love for architecture and culture. With a natural flair for teaching, Tasneem has conducted multiple workshops within the country and across the globe for years.

Maaria Tanveer, a home-baker and founder of Adoniya Chennai is nothing short of a magician in the world of baking. With extensive knowledge in cake decoration, she has the ability to churn out the prettiest wedding cakes, while also specialising in a versatile range of desserts and savouries.
